雙孢蘑菇（學名：Agaricus Bisporus），俗稱洋菇，為最常見的食用菌種之一，肉質肥厚。原生於歐洲及北美洲，人類至少自古希臘時代起便開始食用，人工栽培則約始於17世紀的法國等地，現在則已經廣泛在世界各地栽培。

雙孢蘑菇最大約可長到蕈傘直徑20公分，蕈柄長度15公分，不過人工栽培的雙孢蘑菇多半在蕈傘成熟張開後直徑達2～4公分時便採收。雙孢蘑菇依外觀顏色區分可分為4種，即白色、灰白色、淡黃色及褐色，其中以白色種最受市場歡迎，也是產量最多的一種。

羊肚菌(Morchella)，又名草笠竹，是一種珍貴的食用菌和藥用菌。

羊肚菌於1818年被發現[2]。其結構與盤菌相似，上部呈褶皺網狀，既像個蜂巢，也像個羊肚，因而得名。
烹調
除商業和藥用價值外，由於羊肚菌子實體（sporocarp，或稱fruiting body，子囊果、孢子果）味道鮮美，營養豐富，因而廣受美食家青睞，尤其是法國烹飪。很多人每年尋找草笠竹只是為了享受它的美味以及尋找過程中的樂趣。

羊肚菌有很多烹調方法，[3] 可用清水浸1-2小時，再洗淨即可配肉類燜、燉、煮、炒，中西餐皆宜。

松茸（學名：Tricholoma matsutake）是屬於口蘑科口蘑屬下的一種食用蕈類，具有獨特的濃郁香味，在日本被視為食用蕈中的極品，可以說松茸之於日本人就猶如松露之於法國人。

松茸好生於養份不多而且比較乾燥的林地，一般在秋季生成，通常寄生於赤松、偃松、鐵杉、日本鐵杉的根部，也有寄生在黑松根部的例子，但較為少見。日本人稱在非時令的梅雨季節長出的松茸為「早松」（サマツ[1]），價值更高，或作為特級食材，或作為討吉利的象徵。

松茸的稀有不僅是因為其成長速度緩慢，也是因為採集困難。松茸一旦突出地面並張開蕈傘，其香氣就會大量逸失，吃起來的味道也變差，經濟價值自然大幅滑落。因此，松茸的採集必須在松茸剛露頭的時候就連根挖出，是一項要求高度的觀察力與豐富的經驗的工作。雖然一直有人嘗試進行商業化的大量裁培，然而迄今仍未有足以量產的成果，所以目前市面上所販賣的松茸幾乎都還是人力上山採集而來的。

雞腿蘑菇屬中高溫型菇類，為草腐土生菌。雞腿菇的味道鮮美，營養豐富，但並非所有品種都可食用，而且不能食用的都有毒性。另外，雞腿菇在採摘後亦不能放得長久，否則當它成熟了之後，亦因為內裡的毒素而不能食用；另外，假如雞腿菇在採摘前已發了毛頭，亦不能食用，因為菌內已開始有毒素。雞腿菇千萬不能與酒精飲品一起食用。
