你吃的是魚漿 還是卡德蘭膠？

您喜歡吃關東煮嗎？您一定以為都是由魚漿製成的。抱歉，在廠商成本考量下，過去多用在素食產品的卡德蘭膠（Curdlan Gum），已大量用在黑輪、甜不辣、魚丸等魚漿製品，且比重越來越多。


卡德蘭膠是衛生署核定的食品級添加物，只需要一兩公克就能做出大量商品，成為不景氣下業者節省成本的利器。每到秋冬，在便利商店和路邊小攤販熱賣的關東煮，甚至賣場熱銷的火鍋料，就有不少「卡德蘭膠」產物。


不願具名的代工業者指出，景氣不好，通路不願商品漲價，一支黑輪成本才幾塊錢，但十年來都不調價，現在魚漿稀少「有錢還不見得買得到」，只有在不改口感下積極提高添加物比重。


廠商指出，卡德蘭膠屬於菌類發酵後的醣類，熱時有可塑性，冷卻後凝固有脆度，可以增加食物口感，過去最常用在素食產品。可以做出的素海鮮，包括海參、花枝、墨魚、魚片等產品，甚至宴席上，配著西生菜燴煮的鮑魚成分也是以卡德蘭膠為主，再添加鮑魚萃取物，經過調色和調味後，就成了幾可亂真的鮑魚，平均一百元的鮑魚，成本只要十元左右。


國內最主要供應商、振源食品化工原料負責人許庭禎無奈指出，近年來他供應的客戶擴大到不少食品加工業者。特別是各項原料價格大漲，魚漿更是缺料，不用卡德蘭膠，「魚丸價錢貴到你買不下去」。


許庭禎說，他所出貨的原料，2002年以前，國內一年使用量僅十噸，但近年來快速增長，估計今年就要用到五十、六十噸左右，他估計添加卡德蘭膠產品的產值，一年超過三千萬元。


許庭禎強調，食品添加物並非完全對人體有害，他說，若以標準程序生產魚丸、甜不辣，可能還會因原料含糖油過高，影響食用者健康。但卡德蘭膠這類添加物就像蒟蒻或明膠，對人體有飽足感卻不含過多油分，消費者應該還能接受吧。

小時候有被金屬拉鍊卡到

我還記得今年年初遇到一個外勞真的 卡德蘭膠
而且卡的真的緊 他弄了1,2個小時還弄不出來
來的時候已經卡再拉鍊頭 粉緊 皮膚都有點cyanosis

後來打LOCAL 後
用kelly及needle holder把拉鍊頭破壞掉後
皮皮才得以脫身
