喝咖啡會利尿，使人脫水，所以喝下一杯咖啡的同時，必須補充兩杯水的份量，才不至於造成身體水分的流失。但是，有誰喝一杯咖啡會補喝兩杯水呢？大多數人以為喝咖啡也是在補充水分，殊不知咖啡喝越多，身體的水分流失得越多。



自然醫學博士 陳俊旭表示，咖啡裡面含有大量咖啡因。咖啡因對人體產生的壞處，可用四個字來形容〞〞「寅吃卯糧」，也就是這個月就吃下個月的糧食。雖然喝咖啡會很興奮、很有體力、很有精神，但這個精神卻是向明天借來的。等咖啡因的藥效過去之後，身體會更感疲乏。陳俊旭醫學博士認為，美國與台灣有很多患有「慢性疲勞症候群」的人，應該都和長期壓力與長期喝咖啡有關。精神不振的時候，喝咖啡的確可以刺激腎上腺素分泌、提升血糖、分解脂肪，但是日積月累下來，會形成焦慮、心悸、失眠、憂鬱、疲倦．．等等問題，所建議民眾最好還是不要喝咖啡，尤其天黑以後千萬不要喝，以免失眠。少數敏感的人，甚至下午開始就不能喝。如果要提神，還有很多好方法，例如喝花旗參茶。



如果有人就是喜歡咖啡的味道，一時戒不掉，陳俊旭醫學博士也建議，可以選用低咖啡因的咖啡。然而大部分低咖啡因咖啡是用化學溶劑，把咖啡豆裡的咖啡因萃取出來；由於化學溶劑可能殘留在咖啡裡，所以並不建議這種咖啡。比較好的方式是用水把咖啡因萃取出來，但是這種咖啡比較難買得到。



此外，咖啡還有很多問題。例如，咖啡產地化肥與重金屬的污染、咖啡豆的烘培問題、即溶咖啡的仿冒問題．．等等。很多人也許不曉得，許多即溶咖啡是用烤焦的綠豆粉、咖啡因與人工咖啡香精做出來的，咖啡因與咖啡香精可以在化工行買到，做出來的咖啡味道與顏色，與真品難以分辨。（本文部份擷取自『吃錯了，當然會生病！』一書）
