防禦苦藥 小腸自動延緩吸收
〔記者洪素卿／綜合報導〕「良藥苦口」可能不盡然正確！最新研究發現，吃到苦味物質時，不只嘴巴有反應，腸道也會基於自我保護，自動提高飽足感，並試圖延緩苦味物質進入腸道的時間。專家認為，基於這個原理，若把藥做得再美味一點，吸收情形說不定更好一些。

值得注意的是，除了抑制食慾的荷爾蒙，腸道中的苦味接受器同時也會促使一種可以刺激胰臟分泌胰島素的蛋白質GLP-1開始製造。研究人員認為，這項結果對於未來糖尿病或其他疾病的治療可能非常有幫助。

這項研究由加州大學爾文分校Timothy Osborne教授等人共同發表在即將出刊的Journal of Clinical Investigation上。

小朋友以及許多哺乳類動物在嘗到苦味時，會習慣性地把食物吐掉，這是因為大自然中許多天然毒物具有苦味，因此身體傾向不讓這些食品進入，也就是一種自我保護機制。

除了口腔對於苦味有防禦機制，這項研究指出，人體還有第二線針對苦味的保護機制，即位於小腸。

研究人員指出，當吞下苦味食物後，在腸道的苦味接受器便會啟動製造一種可以抑制食慾、延緩食物從胃進入腸道的荷爾蒙。

而膽固醇似乎負責調節該接受器的活性，在老鼠試驗中，當研究人員以藥物抑制老鼠膽固醇的製造與吸收時，接受器作用明顯活躍，苦味物質出現時，小腸細胞所製造的抑制食慾荷爾蒙，比一般老鼠高了兩到三倍。

雖然是以小腸細胞體外研究，以及實際餵食老鼠試驗等兩種方式進行，研究人員認為，這項結果能夠轉化適用在人類身上。

三軍總醫院社區醫學科祝年豐教授則認為，由於味覺感官主觀影響很大，苦味對於每個人的定義是否相同很難說。但有關影響GLP-1製造的部份，相當值得探究。
