難擋美牛滋味 美食達人拚死也要吃

美牛滋味系列報導(4)(中央社記者劉光瑩台北21日電)美國牛肉放寬進口引起爭議，但愛吃美牛的老饕認為，美國牛肉受歡迎其來有自。知名美食專家胡天蘭就說，美牛貴在油花均勻；餐廳達人梁幼祥則說，「拚死也要吃」。


在狂牛症陰影下，許多人向美國牛肉說不，也有許多老饕偏偏就是「甲意這一味」。

胡天蘭多次擔任台北牛肉麵節評審，對台北的牛排餐廳也如數家珍。她指出，美國牛肉和其他品種牛肉最大不同點，在於油花分佈均勻，且煎後香氣逼人。


她說，美國牛隻在飼育幾個月之後，飼料從乾草改成玉米，讓美國牛肉帶有迷人香氣，且煎後仍能保持秀色可餐的鮮紅色，在外表上大大加分，不像有些國家的牛肉會變黑，。


胡天蘭說，高品質美國牛肉只要下鍋一煎，油脂滲出、受熱之後會產生特殊的焦香，再浸潤到肉的纖維裡，立即香味四溢。只要撒點海鹽就可上桌，不需任何矯飾，強調食材新鮮就是珍饈美味。


在北投開餐廳的梁幼祥，曾撰寫多本美食書籍，本身也是料理行家。他認為，美國牛肉之所以讓饕客趨之若騖，在於其肉汁飽滿、口感豐富，是其他品種牛隻無可比擬。


他表示，日本有人「拚死吃河豚」，美國牛肉的美味，也能讓饕客不顧一切。


梁幼祥說，他最喜歡吃沙朗牛肉，通常會將肉片成0.2公分左右薄片，用大火熱鍋，肉片下鍋後，一面煎5秒，另一面煎約2秒。表面煎熟後，能把肉汁完整封存在肉裡，起鍋後撒點鹽，在5秒鐘內品嚐，就是人間美味。


他強調，牛肉絕對不能用小火慢煎，這樣只會讓肉汁流失，失去應有風味。他並說，「牛肉應該要4分熟，看起來水汪汪的才好吃。」


除準備高品質牛肉、懂得烹調，梁幼祥也建議，老饕們大快朵頤時，準備一瓶好酒、邀請一群好朋友作陪，讓用餐不只色香味俱全，更充滿人情味。981121
