詹智淵╱彰化報導】醫師築夢，脫下白袍轉行賣鹽酥雞！五十五歲急診醫師施教賢放棄三十萬元月薪，改行開鹽酥雞專賣店，雖目前月收入五萬元、僅當醫師的六分之一，且每天炸雞忙得滿頭大汗，他卻樂在其中，指：「一點也不覺得苦，因為這是我人生的創業夢想！」

家人一度不諒解

施教賢出身醫師世家，父親和大哥先後在日本當牙醫，他也在多家醫院急診室擔任醫師，三年前有感醫病關係惡化，言語和肢體暴力增多，他說：「很心寒！」萌生離去的念頭，喜歡吃鹽酥雞的施教賢，遂辭去鹿港基督教醫院急診室醫師職務，轉行賣鹽酥雞。
歷經數百個日子研究，施教賢改變麵粉比例、調整油溫，研發出較不油膩的鹽酥雞。施妻和家人原對他轉行不諒解，但看到施教賢投入炸雞店的認真模樣，放手讓他築夢。
彰基一名張姓醫師說，施教賢看診非常認真，對病患有耐心，對新事物充滿好奇心，聽聞他改行賣鹽酥雞，「有點意外！」
蔡姓顧客得知專賣店老闆曾是醫師，頻說：「醫生也能炸出外皮酥脆、少油、雞肉咀嚼起來有湯汁的鹽酥雞，真令人驚訝。」

想赴日本開分店

施教賢的鹽酥雞專賣店位於彰化市民族路旁，每天下午三時開始備料，往往忙到深夜零時才休息，他說，過去當醫師，常被患者和家屬拜託，現為一包五十元鹽酥雞業績，需反過來感謝顧客光顧，「職業不分貴賤，自己做得很開心，計劃至日本開分店，弘揚台灣鹽酥雞！」
