人造反式脂肪「傷心」 美擬禁用

〔編譯詹立群／綜合報導〕美國食品藥物管理局（ＦＤＡ）拚食安，七日提議查禁加工食品中的人造反式脂肪，盼藉此避免每年兩萬起突發性心臟病個案與七千人死亡。美國公衛界在提倡禁用人造反式脂肪議題奮鬥三十年後，終於取得重大勝利。
ＦＤＡ在提議中宣布，不再把人造反式脂肪的主要來源「部分氫化油」列為安全食品，企業若要使用「部分氫化油」，必須提出科學證據，證明其食用安全性。此提議需要經過六十天的公眾評議期後才能正式定案，之後「部分氫化油」將被視為食品添加物，未經許可不得使用，而某些肉類與乳品中所含天然的少量反式脂肪則不在此限。
會引發壞膽固醇 造成心臟疾病
ＦＤＡ官員說，人造反式脂肪普遍存在如餅乾、薯條、冷凍生麵糰、咖啡奶油球與現成的糖霜、冷凍餐盒等，會引發壞膽固醇、造成心臟疾病。「氫化」是將液態植物油轉化成固態或半固態脂肪的化學過程，可延長保鮮期限，在爆米花、甜甜圈與披薩中加入反式脂肪，則可固定滋味與口感。
美國心臟學會讚許ＦＤＡ的行動，稱在對抗心臟疾病上邁了一大步。反式脂肪會升高壞的膽固醇（ＬＤＬ），降低好的膽固醇（ＨＤＬ）及降低血管內皮功能，增加罹患動脈硬化心臟疾病等心血管疾病的風險。
歐洲國家如丹麥、瑞士與冰島都已禁用人造反式脂肪，其他許多國家也都有嚴格規範。紐約市已於二○○七年明令禁止餐廳使用部分氫化油。
ＦＤＡ官員稱，自二○○六年起要求業者在食品外包裝上清楚標示反式脂肪含量後，反式脂肪使用量雖已大幅下降，美國民眾每日平均攝取量從二○○三年的四．六公克，降到去年的一公克；但仍有許多加工食品中含有人工反式脂肪。
不過，全面禁用反式脂肪並非一蹴可幾，ＦＤＡ強調，他們會以不干擾市場的方式推行禁令，不同食物會有不同的禁用期限，一切端視廠商找尋替代品的進度而定。專家表示，食品業者改變配方耗時傷財，一般需要兩年才能完全定案。至於全球最大棕櫚油產製國印尼及馬來西亞業者表示，可能會因此獲益、提升外銷量。
