菜薊(學名:Cynara scolymus,義大利語:Artichoke),又名食托菜薊、洋薊、朝鮮薊,是一種在地中海沿岸生長的菊科菜薊屬植物,香港一般按其義大利語音譯作雅枝竹或亞枝竹,分布於中國大陸的陝西省等地[1]。它的花蕾可以用來煮菜,最初是透過義大利料理而傳入華人社會。

The Globe Artichoke (Cynara cardunculus)[2] is a perennial thistle originating in Southern Europe around the Mediterranean. It grows to 1.5–2 m tall, with arching, deeply lobed, silvery glaucous-green leaves 50–82 cm long. The flowers develop in a large head from an edible bud about 8–15 cm diameter with numerous triangular scales; the individual florets are purple. The edible portion of the buds consists primarily of the fleshy lower portions of the involucral bracts and the base, known as the "heart"; the mass of immature florets in the center of the bud is called the "choke". These are inedible in older larger flowers.

Cynar is dark brown in color, has a bittersweet flavor, and its strength is 33 proof (16.5% alcohol).
Cynar can be drunk as either an aperitif (generally over ice), or as a cocktail (mixed with soda water and lemon or orange slice, or with cola, tonic water, or bitter lemon soda). Europeans often mix it with orange juice. Because of its artichoke component, Cynar is also regarded as a digestive.

(Artichoke、Globe artichoke、学名Cynara scolymus)、菊科朝鮮薊屬多年生草本。和名:朝鮮薊(チョウセンアザミ)。幼嫰花苞食用。地中海沿岸原産。高約1.5-2m、葉50-80cm不等、花苞8-15cm。江戸時代引進日本。
本來是野生薊、但自古希臘羅馬時代以來、隨品種的改良進展至現今的模樣(其近縁種Cardoon、Cynara cardunculus)比較細長尖鋭但同様可以食用。
食用前先將花苞與檸檬等同煮或蒸熟。然後去除花或果實的冠毛(繊毛)、並剝去蕚状苞片、 保留苞片基部的肉質部分、最後把花托分切以供食用。朝鮮薊食用部分含有豐富的澱粉、其食用的感覺和薯類相似。富含水溶性食物繊維。
在歐洲或美洲廣泛食用、而日本因栽培條件不適合之故,無法像蔬菜一樣普及,大多供觀賞用。 在義大利料理中、被稱為 (carciofi 複)(或 (carciofo 単))如一般的蔬菜般當做前菜使用。越南則將朝鮮薊乾燥後泡茶飲用。
因它的口感、朝鮮薊在英美地方叫做菊芋也稱之為Artichoke。
